Sourdough Soft Sandwich Bread in a Day

Ingredients

  • 300ml water
  • 150g live active sourdough starter
  • 25g melted butter or olive oil
  • 550g bread flour
  • 25g raw sugar or honey
  • 10g salt

Method

  1. Combine melted butter or olive oil, water and sourdough starter together.
  2. Add bread flour, sugar or honey and salt.
  3. Mix until well combined.
  4. Knead for roughly 10 minutes either by hand or with a machine of your choice.
  5. Place in a bowl, cover and rest for 30 minutes.
  6. Stretch and fold x3 every 30 minutes.
  7. Leave to bulk rise on bench for 3–4 hours.
  8. Shape into loaf tin and cover.
  9. Leave on counter to rise for 1–2 hours.
  10. Put in fridge for 1 hour covered.
  11. Score and bake at 200°C for 30 minutes covered.
  12. Bake for a further 15–20 minutes uncovered, depending on how much colour you like on top.
  13. Leave to cool on a rack for at least 1 hour before cutting.
